Veuve Fourny's style can be described as classic Côte des Blancs: refined, rich, chalky minerality that emphasizes freshness and purity. The Fourny family believes in a minimum dosage for all their Champagnes, preferring that individual terroirs are expressed more clearly. This technique, in addition to their commitment to partial malolactic fermentation in their blends, impeccable vineyard management and their decision to age most base wines partially in casks, all contribute to their unique style.
Veuve Fourny & Fils
There are two cuvées that are fully vinified from wood, their R de Veuve Fourny and Clos Faubourg Notre Dame, both of which are among the house's most prestigious champagnes

Fourny's only uses first-press juice for bottlings. All fermentation takes place in steel tanks, and about a quarter of all wine undergoes malolactic fermentation. About 30% of all their wine is aged in Burgundy barrels and on the less for 6 months, the remaining 70% is aged in temperature controlled steel tanks with regular stirring on the lees. The brothers like to blend different wines to create a fuller wine with roundness and freshness.

Fourny cellars were built in the 1840s and are known for their ability to maintain high levels of humidity, which is great for barrel aging.

Cuvée 'R' is vinified in small oak barrels, and then set for 18 months on the less. Later for another 4 years in bottles "sur latte". Luxurious and vinous champagne perfect for gourmet dishes.
